Exploring Zero-Waste Cocktails on a Flor De Cana Bar Crawl in Singapore
“Sustainability” is a concept that has left the bar scene rather divided on its feasibility. Some think sustainability is a hollow buzzword meant for virtue signalling, others think it’s a practice that educates on the paramount rituals of cutting down on waste.
Flor De Cana falls in the latter category — they take pride in their fastidious endeavour to keep their spirits sustainable, in a bid to illuminate these woes in an industry notorious for wastefulness.
Because of that, they’re strong advocates for zero-waste cocktails and this year, the sustainable champions have returned with another instalment of zero-waste cocktails in Singapore.
In its newest edition, Flor De Cana is lining up a month of zero-waste cocktails that align with its sustainable ethos in bars all around Singapore
Starting its run on 15 August 2022, the sweet taste of sustainability will be available at beloved haunts in the bar scene including MO Bar, Papa Doble, and Nutmeg & Clove.
To get a hint of what’s to come, brand ambassador Rob guided us through three different venues to showcase what’s installed until 15 September 2022.
Papa Doble
Starting things on the right foot, the tasting party were assembled at the Keong Saik Stalwarts of Papa Doble.
The bar, a homage to Ernest Hemingway, actually practices many of Flor De Cana’s zero-waste principles on the daily — they’d forgone garnish on their cocktails, opting to upcycle and infuse surplus ingredients into the tipples themselves.
What they’ve prepared for this sustainability party was an espresso martini alter ego that would garner plenty of affection amongst casual drinkers.
Using spent coffee sourced from a local cafe, the Pop Didi Pop was a deep and punchy redistillation using Flor De Cana’s rum. A splash of acidity and a touch of floral notes made it a pretty dependable rendition for coffee lovers.

Set of Six
After the glasses were emptied at the first stop, we took a short trek a few blocks down to the next destination on the itinerary, Set of Six.
Its swanky, lavish lounge stylings might make some wonder how does Set of Six fit into Flor De Cana’s zero-waste cocktail philosophy?
As stylish as the fixtures were, nothing in there was as stylish as the Root & Grain. Conceptualised with Flor De Cana’s zero-waste in mind, this was a unique cocktail that repurposed ingredients while making a conscious effort to involve sustainable ingredients with hardier shell lives, including carrots.
They hit it out of the park with this. As peculiar as a combination of carrots and grains may sound, it was the most elegantly balanced medley of light carrot savouriness, splashes of sweetness, and an ambrosial underscoring maltiness.

Night hawk
Our third and final stop of the Flor De Cana Zero-Waste Cocktail bar crawl was at Night Hawk, the new kid on the Tanjong Pagar cocktail bar block.
As small as it was, there’s a cosy, rowdy charm to the small constraints of the speakeasy — It’s classy but also bustling and it’s modern but also rustic.
Night Hawk’s first-ever contribution to Flor De Cana’s Zero-Waste Cocktail catalogue was a simple but efficacious one — the tried-and-tested pairing of the punchy Old Fashioned and aromatic banana.
While the Total Synastry is not an entirely novel creation, a lot of meticulous thought was put into crafting it, utilising every single part of the banana. Ultimately, it’s punchy, sweet, and has a distinct zing to it — a solid Old Fashioned by all accounts and a gratifying nightcap for a delightful sustainability-focused night out.
