Hokkien Mee recipient of Michelin Bib Gourmand, masterfully fried with amazing sambal.
[Update: Tiong Bahru Yi Sheng Hokkien Mee has closed.] With regular queues of up to an hour and a Michelin Bib Gourmand Award, is Tiong Bahru Yi Sheng Hokkien Mee that good? Well, the ABC Brickworks store is my favourite Hokkien Mee ($4/5/6) in Singapore.
I deem them to have the best Hokkien Mee sambal chilli. It brought a certain je ne sais quoi that set this stall apart from others. Loaded with ikan bilis, it was beautifully sapid with wafts of fragrance and an endearing controlled sweetness — all while retaining a decent fiery kick.
Decades of frying mastery churned out this plate of springy noodles which were moderately moist but not soakingly wet. This is perhaps my preferred texture.
Their stock was undoubtedly rich but not the most intense, compared to some of the other Hokkien Mee stalls up for contention as the best in Singapore, like Tian Tian Lai. This more controlled intensity resulted in a meticulously balanced profile perfumed with mild but tangible wok hei.
Many people enjoy crazy rich flavours, but I find many too heavy-handed. I thought Tiong Bahru Yi Sheng Hokkien Mee’s subdued profile was purposeful in creating an undemanding canvas. This permitted the sambal, and the citrus to an extent, freedom to seamlessly bleed into voids and pop with bold personality.
The outcome was a balanced but simultaneously complex profile, with each facet of flavour being eloquently enunciated without conflict. Perhaps the best Hokkien Mee in Singapore in terms of balancing flavours.

If you’re looking to try some of the best hokkien mee, Tiong Bahru Yi Sheng hokkien mee is one of my top choices.
And michelin judges agree with me too, even if they do get their michelin bib gourmand hokkien mee wrong sometimes, as I wasn’t impressed by the other. Fair warning, to avoid the massive queues, try calling in to reserve a takeaway packet instead!
