Trends are ruthlessly fleeting in the cafe scene. One moment, the flavour of the month lures in the most enthusiastic crowds, the next, it’s left vacant and lifeless on a sunny Saturday brunch. Still, if there’s one thing that has stood the weathering of fickle cafe fads, it’s the timelessness of bakes and Madu the Bakery is a solid case study for blending trends with the classics.
It’s an indelible fact that sourdough has generated an incredible amount of buzz in the cafe scene in recent years. Even with the deluge of scrumptious bakes, pastries, and pizzas, I don’t think any other establishment has been able to utilise wild yeast fermentation as holistically in Singapore as the newly opened Anna’s Sourdough.
Cloudstreet is the second child of Rishi Naleendra, who first made his mark first on the Singapore restaurant scene through Cheek by Jowl, now rebranded as Cheek Bistro. He was awarded his first Michelin Star at Cheek in 2018 and is on track to open his third restaurant in Singapore.
Micro Bakery was a relative newcomer that quickly already solidified its stature in the artisan bakery scene in the span of a year. Sourdough is ubiquitous in Singapore right now, used in all manners of dough including pizza dough — and this humble bakery was one of the trailblazers.
Stateland Coffeehouse has been reborn as Brotherbird Coffeehouse. The previously popular cafe known for unique items like their mochi donut soft-serve shuttered late last year. They have rebranded for their offshoot to take the main stage.
